Prepackaged mix supper

Supper turned out pretty good. Instead of having the skillet lasagna, we opted for another boxed pasta mix but it was Mediterranean Chicken. It had a lower sodium seasoning mix that was made with real herbs and spices. No artificial flavors or ingredients you can't pronounce.

Instead of using chicken, though, we did as the package suggested and used pork. I had a tiny pork roast in the freezer and it didn't take long to thaw it out, then slice it thinly. We joking said it was "pork medallions" even though it was just regular pork cut up. Pretty much, that's all pork medallions are, though.

Maybe I should have said it was pork platinum coins instead since it cooks up so white. Whatever you call it, it was tender and tasty. We did enjoy green beans and garlic cheese toast with it. Now, my tummy is full and I am getting drowsy.
