Monday food adventures

I've had a pretty busy day today. Worked from 5 AM to 11 AM. (It was supposed to be till noon, but it was slow so they asked some of us if we'd mind shortening our shifts. I agreed to it.)

When I got home and changed my clothes, I put a load of laundry in to wash. Then, I got to thinking about what one of the ladies said she'd had for supper the night before - minestrone. That made me want some soup on this very overcast day, so I started pulling containers out of the freezer for a pot of veggie soup. Son found two or three that I'd overlooked, so between us we got all the frozen leftovers out, I added some onion and canned, diced tomatoes to it and let it simmer for a couple of hours.

We enjoyed it with slices of jalapeno cheese bread and a couple of leftover biscuits from the other day. I fixed my lunch for tomorrow from it, too. I'd made a 4 quart pot full so there was plenty left when we finished eating. I took what was left and canned it, making two quarts of ready-to-heat-and-eat veggie soup.

After that, I canned 5 pints of veggie/meat stock I'd put in the freezer a couple of weeks ago. My original intention was to can them and free up some freezer space, so I'm glad I had the chance to do that tonight. I've already used some of the stock in other soups, though, and it's quite good.

By the time all the canning was done, it was time to relax in front of a movie for a little while, then head to bed.
