Supper plans for Monday night

Elizabeth is planning to come over tomorrow while we're at work and fix a pot of clam chowder for us all. We have to work 11 to 7, so she'll come after she gets off work and fix it. I put the ingredients on the table except for clams and potatoes. She's bringing those. I also put the recipe out so she can follow it. Brandon's not fond of chowders at all, but we've got other things he can eat if he wants. He's ok with that.

I'm very much looking forward to the chowder. For anyone who's interested, here's the recipe I use:

Clam Chowder

2 tablespoons butter
1/2 cup finely diced celery
1/2 cup minced onion
1/4 cup finely diced green pepper if desired
3 Tablespoon flour
2 cups milk
3 cups finely diced potato
two 7 oz. cans of minced clams
1 teaspoon salt
pepper to taste



Directions:

1. Simmer diced potatoes in as little water as possible until tender. When done, add the milk and set aside. Don't drain the potatoes.

2. Melt butter over low heat in a heavy saucepan.
Add celery, onion, and green pepper. Stirring
occasionally, cook 6 to 8 minutes, or until partially
tender.


3. Blend flour into the vegetable-butter mixture; heat
until bubbly. Gradually add potatoes and milk, stirring
constantly. Bring to a boil and simmer 25 to 35 minutes,
stirring frequently. Add minced clams and the juice they are canned in. Add salt and pepper and stir in gently.
