Mexican food

That's what I fixed for our lunch today. Boy! Was it ever good! I'm sure I don't do as well as the Mexicans do, but it's still very tasty.

I had some chicken that I'd saved out of the chicken noodles from the other day. I shredded that and just used taco seasoning in it. I microwaved it for a few minutes.

I also had leftover pinto beans from a few days ago, so I put them through the food processor. I sweated some onion, chilies, and jalapenos in a skillet then added the processed beans and made refried beans. I served mixed salad greens, corn tortilla chips, black olives, sour cream, salsa verde, and yellow rice (cooked in the steamer). We just made ourselves a Mexican salad on our plates with all that stuff. It was all very tasty.

We really like Mexican food and it's been quite awhile since I've fixed it. We have plenty left to have for our Sunday lunch, too.
