Mint jelly recipe
This is the mint jelly recipe I'll be using. Not sure where I found it, but it's simple enough. I forgot to get lemon juice, though, so I'll have to get that before I can make the jelly. Since mint leaves would be very low acid, I'm sure this will be necessary to help it set.
MINT JELLY
- 1 1/2 CUPS CHOPPED MINT LEAVES
- 3 1/2 CUPS WATER
QUICK BOIL; LET STAND 10 MINUTES.
- 3 CUPS JUICE
- 4 CUPS SUGAR
- 3/4 CUP LEMON JUICE
- 1 BOX SURE-JELL
MAKE JELLY ACCORDING TO PACKAGE DIRECTIONS. POUR INTO HOT 1/2 PINT JARS. SEAL. PROCESS.
YIELD: 5 1/2 CUPS
