Sunday dinner on another day
We wind up having "Sunday Dinner" on odd days of the week around here. This time, it was on Thursday.
I put a couple of handfuls of baby carrots in the bottom of the crock pot. On top of that I added 5 new potatoes, cut in half. Then I quartered two onions and put those on top of the other vegetables. I put the beef roast on those and added sliced onions, a sliced sweet banana pepper, some garlic, and herbs (oregano, sage, rosemary, thyme, lemon balm, and basil) to the top. I let it cook on low for about 8 hours. It was highly flavored and tender when we sat down to eat it.
In the meantime, while the roast was cooking I started a loaf of bread in the bread machine. I then sliced up a tomato, a Vidalia onion, and a cucumber in a bowl. I mixed up some balsamic vinegar and olive oil, adding a touch of honey dijon mustard, garlic, and herbs to it. I poured it over the fresh veggies and covered the bowl, letting it marinate in the fridge while everything was cooking.
I have to tell you, this whole meal was so satisfying and hearty. There was no salt added because the herbs added enough flavor that it wasn't needed at all. There was a teaspoon of salt in the bread, which is necessary to stop the yeast action at a certain point. There are leftovers enough for another go or two, too.
