Gorgeous Thursday

A day off is a wonderful thing. Especially when the weather is as lovely as it is today. The sun is shining brightly and there's a cool breeze blowing.

I've been doing laundry and hanging out clothes on this beautiful day. I've also got a double batch of bread dough in the machine. I'll bake it up in loaf pans in the oven. I really like the results of oven baking for bread better than how they come out when the bread machine bakes them.

Yesterday, I used some leftover home made bread to make bread crumbs for baked pork chops. I also used some of it to make some dressing to go with the chops. It all turned out yummy. I served it with canned cranberry sauce (the jellied kind) and some cheesy stewed potatoes. Yeah, a huge carb load but I was really in the mood for some carbs yesterday.

It was just a small batch of dressing, but it really hit the spot for lunch. Since so much of the time either Son or I are at work at odd times, I usually cook larger meals in the middle of the day. That way we can eat when we get a chance, either before or after our shifts.
